Huh. Prolly should'a seen THAT coming in regards to Cancun. Maybe that was why I didn't like it much, either.
My mom and I use monterrey jack cheese and queso cotija for our enchiladas. You want queso oaxaqueño? No need to look further than here in LA (unless that's considered fake queso oaxaqueño...then you'd probably hafta go to Olvera Street). I can mail you a batch if you want. Hopefully it's still fresh when it gets to TN.

Can't say that I've had food from the Yucatan peninsula. I've BEEN there (Cancun), but never tried the food. Maybe next time I go there I'll try that cochinita pibil. You'll be the first to know.

We all know that Cancún isn't "México". What defines it? Well, when there is a "Wet and Wild" amusement park being advertised and all the streetsigns are in English!
